The Lake Room – Where New Ideas are Built on Old Traditions
Our Executive Chef Robin Suter and Chef de Cuisine Gavin Gleeson have developed the classically wonderful cuisine of Fredrick’s for a new century. To complement the wonderful new menu, we have completely redesigned our restaurant concept with a brand new identity, the Lake Room. Our talented chefs continue to use fresh local produce to create exceptional dishes with an eclectic European flavour.
The restaurant has 15 timber framed feature panels with illuminated sheer and linen fabric inserts. They have 12 locking positions, which pivot to divide the spaces up in various ways providing areas of private dining within the main restaurant. In the centre of the room, we have created an “Aladdin’s Cave” for wine lovers. A glass walled wine cellar provides a wonderful feature and a place for guests to decide on a special vintage to accompany their meal.
In this unique restaurant, full Irish breakfast and dinner is served daily. The restaurant offers Sunday brunch, and the extensive buffet table is filled with a tasty array of dishes from which to make your selection.
Dinner specialities at Lake Room include Confit Belly of Pork and Milk Fed Veal, Peach Sauce and Trellace of Sea Trout, Rock Salt Beans and Sauce Verge. A new range of innovative spa dining options is being developed to complement the wellness programmes throughout the hotel.
Extra ambiance comes courtesy of the hotel’s resident pianist, who plays during dinner.
Light meals, snacks and afternoon tea are available in the Heights Bar and Lounge, along with a selection of fine wines and cocktails.
