Welcome to Summer at the Aghadoe Heights Hotel & Spa.

The Aghadoe Heights Hotel & Spa in the summertime is a wonderful place. Every morning the hotel is bustling with the chatter of ladies floating to the spa, the bluster of Fly Fishermen going to catch the big one and the excitement of couples heading into the national park or beaches. The recent balmy weather has been a big hit with everyone and many golfers managed to turn golden in front of our eyes.

It is a busy time for the hotel but hugely enjoyable. Our summer staff has returned and bring a youthful eagerness and freshness that energises all of us. Their energy was evident at the recent Summerfest in Killarney when Meatloaf, Status Quo & Snow Patrol drew large crowds to the town. This is definitely festival season and the Summerfest was followed by the Killarney Races to be joined shortly by Puck Fair & The Rose of Tralee.

We are delighted to announce the arrival of our new Head Chef Gavin Gleeson, who will work along side our executive Chef Robin Suter. Gavin has worked with Michael Thornton & Richard Corrigan. They are creating some fantastic dishes at the moment and well into designing a food strategy for out new “Spa Café” which we hope to launch in Spring 2006.

We are currently putting the finishing touches to our Autumn & winter breaks. A varied & interesting suite of Packages, there should be something to suit all tastes. We are really excited about SAOL, a lifestyle Health & Wellbeing break designed with some of Londons top health practitioners.

Gavin was born in County Limerick  and moved with his family to England during his early years. This is where Gavin schooled and begin his career in the catering industry. Starting out as a Kitchen porter (as most chefs do) he decided to leave school and follow his career as a chef.

He moved back to Limerick in 1990’s and started an apprentice in Dromoland Castle under the watchful expert eye of Mr. Dave McCann. Gavin successfully represented Dromoland / College in many culinary competitions.

Gavin went to Limerick Institute of Technology where he was elected Chairman of the Culinary Society and finished his schooling with a diploma.

After returning home to Ireland he took up a position in Dublin, as Chef de Partie in Thorntons 2 star Michelin restaurant.

Gavin has now been with us for 2 months and already has put his stamp on the culinary delights that we are so proud of at the Aghadoe Heights Hotel & Spa.
