Hot Cross Buns

As we get set for Easter we are delighted to share this delicious recipe with you.


For the dough:

1000gr flour 

110 gr whole eggs

500 gr milk

18 gr salt

110 gr caster sugar

50 gr honey

25 gr fresh yeast or 12 gr of dry yeast

10 gr cinnamon powder

5 gr cardamon powder

5 gr of star anise powder

160 gr butter


Condiments:

200 gr oranges candies chopped

200 gr raisins

1 EA. lemon zest

1 EA.  orange zest


For the Cross:

100 gr of water

80 gr flour


Preparation:

In a dough-mixer add the ingredients for the dough all together at a slow speed for 5 minutes.

Then 7 minutes on medium speed.

Add the condiment and mix for 2 minutes at a slow speed.

Rest the dough at room temperature for about 20 minutes.

Roll it at 80 gr EA. on oven tray coat with baking paper.

Let it prove in a warm place till the size doubles up.

Pipe the cross on top of it and bake in preheated oven at 165 degrees for 25 minutes until golden brown.

When still hot, brush some sugar syrup on top.
